Banana Bread

The past week has been a little crazy where we live.  For the past year, our community has been preparing for the Great American 2017 Solar Eclipse.  Being in the path of totality could mean hundreds of thousands of people coming to visit our area, and we were told in advance to have groceries and gas on hand in case stores were wiped out.  A week before the Eclipse, everyone in town hit the groceries stores and the banana shortage of 2017 began. 🙂

Within 24 hours, the grocery stores were restocked and everything was fine (more about the eclipse at the end of the post).  In honor of all those now ripe bananas, I felt it was the perfect time to share my recipe for banana bread.  It is moist, full of flavor, and a favorite of family and friends in our area.

Banana Bread

1/2 cup (1 cube) butter, softened

1 1/4 cup sugar

2 eggs

2 bananas

1 1/2 cup buttermilk

1 tsp vanilla

2 1/2 cups flour

1 tsp salt

1 tsp baking soda

 

Preheat oven to 350. Combine butter and sugar with a mixer (I have a KitchenAid mixer that I use for everything and it is awesome!).  Add eggs and beat to combine. Next, add bananas and mix well.  Add in buttermilk and vanilla, and then the dry ingredients (flour, salt, and baking soda).  If you do not have buttermilk on hand, you can use milk and 1 tsp. lemon juice.  Mix to combine ingredients.

Spray pans with cooking spray and divide batter between pans.  The recipe will make 2 regular size loaves or 5 mini loaves.  If making mini loaves, each pan will have about 1 cup of batter. The pans I use are similar to THESE.

For regular loaves, bake at 350 for 1 hour.  For mini loaves, bake for 35 minutes.  I personally prefer the mini loaves since they are the perfect size to share with friends and neighbors.

In case you were wondering, we did have thousands of visitors from around the world come to our area, but luckily the extreme craziness didn’t happen (although freeway traffic did look like a nightmare afterward).  The solar eclipse was absolutely incredible, and we are so grateful that we got to see it in totality!

This banana bread is moist, full of flavor, and will quickly become one of your favorite banana breads!
Ingredients
  • ½ cup (1 cube) butter
  • 1¼ cup sugar
  • 2 eggs
  • 2 bananas
  • 1½ cup buttermilk
  • 1 tsp vanilla
  • 2½ cups flour
  • 1 tsp salt
  • 1 tsp baking soda
Instructions
  1. Preheat oven to 350.
  2. Combine butter and sugar with mixer.
  3. Add eggs and beat to combine.
  4. Next, add bananas and mix well.
  5. Add in buttermilk and vanilla. If you do not have buttermilk on hand, you can use milk and 1 tsp. lemon juice.
  6. Add flour, salt, and baking soda.    Mix to combine ingredients.
  7. Divide batter between greased loaf pans. If using mini loaf pans, there will be about 1 cup of batter per pan.
  8. For regular size loaves, bake for 1 hour at 350. For mini loaves, bake for 35 minutes at 350.
