Camping season is underway, so I wanted to share one of our favorite camping recipes. We made them on our first camping trip many years ago and they quickly became a family favorite. After many years of camping, we sold our camp trailer last summer but we still like to make these Marshmallow Eclairs in our backyard firepit.
My oldest daughter told me about campfire eclairs when she went to girls camp for the first time. I had seen a similar recipe in the Family Fun Magazine. The Family Fun recipe used bread stick dough wrapped around a stick, cooked over the fire and then filled with vanilla pudding. My daughter made them at girls camp using refrigerated biscuits so that is what I bought. We got everything we needed and were all set to make them on our first camping trip.
When we got ready to make them, we discovered that I had left the vanilla pudding mix at home. We had really been wanting to try them, so we started thinking about what we could do instead, and Campfire Marshmallow Eclairs were created.
They are simple to make and soooo good. We started by wrapping a regular big marshmallow in one refrigerated biscuit (you know the ones that make you jump every time you open the can). We have found over the years that Pillsbury Buttermilk biscuits work best. I have used the store brand ones but they didn’t cover as well.
Place the covered marshmallow on a roasting stick and hold over the fire. We kept ours about a foot or so above the coals. You want it to cook slowly so that the biscuit has a chance to puff up and cook all the way through. You also want the marshmallow to warm up and get soft and gooey. If you hold it too close to the coals, it will cook too quickly and not warm all the way through. Rotate the stick every 30 seconds or so that it cooks evenly. Be careful though because you don’t want to lose it in the fire!
When your marshmallow is ready, it’s gooeyness will start to come out of the seams. Mmm…..almost done. Carefully remove your marshmallow éclair from the roasting stick and put it on a plate. Top with chocolate frosting or Nutella and a spoonful of whipped cream. Enjoy and repeat (trust me, you will want more than one!).
We loved these so much that we made them again on future trips, but we added chocolate in with the marshmallow. Also delicious! Enjoy this family favorite and hopefully, it will find it’s way into every camping trip for years to come!
