Peach Cobbler

We adapted this peach cobbler recipe from a Dutch oven recipe.  We have tried other cobbler recipes over the years but always come back to this one. It is super simple with only 4 ingredients.  It is also delicious cooked in a dutch oven if you are looking for an easy camping dessert.  

Last week, I bought a box of peaches to make jam, so we decided to try this cobbler with fresh peaches.  We may have found our new favorite way to make cobbler because it was amazing with fresh peaches!

 Peach Cobbler

 5-6 peaches, peeled and sliced or use a 28 oz. can of peaches 

1/4 cup (1/2 cube) butter, melted

A yellow cake mix

1 can of Sprite/Lemon lime soda pop 

Preheat oven to 350.  If using canned peaches, drain part of the juice.  Pour peaches into a greased 9×13 pan.   Drizzle with melted butter.  Sprinkle dry cake mix over peaches.  Using a spoon, carefully flatten any clumps of the mix.  Otherwise, you will get powdery clumps that don’t cook on top.  Pour the Sprite over top of the cake mix.  The soda pop will mix with the cake mix and start to fizz. 

 

Cover pan with tin foil and bake for 50 minutes.  Carefully remove the foil and bake for an extra 10 minutes to brown.  Allow to cool for a few minutes before serving (it will be really hot!). 

 Best served with vanilla ice cream.  Refrigerate leftovers. 

 

Notes: This recipe can easily be made gluten free by using a gluten free yellow cake mix.
