My mom always made this recipe for Thanksgiving when I was a kid. I liked it ok, but to be honest, it was not my favorite. As I got older, I grew to love this side dish and now I look forward to it each Thanksgiving.
My husband’s mom only made sweet potatoes for Thanksgiving once when he was growing up. No one would eat them, so she never made them again. After we got married, he refused to even try this recipe. It took us 5 YEARS to finally get him to try it. And what do you know- He LOVED them! I have made this side dish for Thanksgiving with his family and everyone in his family liked them too.
But this recipe isn’t just something that can only be made once or twice a year. It is also good with pork chops or a pork roast.
Sweet Potato (Yam) Soufflé
29 oz. can sweet potatoes (3 cups mashed)
3 Tbsp. butter or margarine, softened
1 tsp. vanilla
1/4 cup milk
1/2 cup sugar
1/2 tsp. salt
2 eggs
Mash sweet potatoes and butter. Add other ingredients and mix together. Pour into a 2-quart baking dish. I use a round dish, but an 8×8 or 9×9 pan would work too.
Topping
2/3 cup brown sugar
1/2 cup flour
1/2 cup walnuts
3 Tbsp. butter
Mix together topping and sprinkle on top. The original recipe called for 1 cup of brown sugar, which is what I used in the photo above. It was a little too sugary, so I cut the brown sugar down to 2/3 cup. Bake at 350 for 30 minutes.
This recipe goes perfectly with turkey for Thanksgiving. I also like to serve these sweet potatoes with pork stuffing and Pioneer Woman’s Pork Chops (the best pork chops ever!). For more great recipes, check out Sweet Purple Tulips on Facebook and Pinterest!
